In India there are zillion different varieties of cooking. You travel 100kms and you will find different taste and flavor. So it is practically impossible to learn Indian cooking. If we want to narrow it down and categorize then there are few different types like North Indian (which is mostly popular in west), South Indian, Bengali, Rajasthani and Gujarati and Maharashtrian. South Indian cooking- Southern part of India formed mostly tamil- telugu- kannada and Malyali population. It is a whole different world all together compared to North or rest of the India. Very tropical, lots of coconuts, fish and rice.
